I noticed the UI thread below and I am wondering if it is considered noobish to not use a custom UI? Does it help out more for raiding, or do most people get them strictly for looks? Any suggested UI's for rogues?

Utility first, aesthetics second. If it's comfortable and benefits your gameplay, use whatever you like.

As a guild we require a few mods, but they're generally boss and threat mods that provide a benefit to the raid as a whole.

Custom Ui is a must imo. Gabranth is right that aesthetics come second to utility. If you decide to use a cutom UI, try a few defferent ones (like a week or so trial) although this is time consuming, the right UI can help your gameplay out, as well as make it more enjoyable.
